Sébastien Sanjou embodies the excellence and authenticity of southern French cuisine. Coming from a family of five generations of restaurateurs in Bigorre, he discovered his vocation at the age of 14 at the hotel school in Biarritz, after immersing himself in Xabi Ibarboure's kitchen team.
At just 31 years old, he earned his first star for Le Relais des Moines, a family restaurant he took over in 2002 in the Var region.
In 2019, he took on the challenge at Trente-Trois, earning a Michelin star just six weeks after opening.
With his love for the terroirs of the South, from Provence to the Côte d'Azur, Sébastien now composes sunny, refined menus deeply attached to beautiful products: vegetables, line-caught fish, Haut-Var lamb... He orchestrates each plate as an ode to the Mediterranean and the best producers.
